It’s time to make some savory waffles, Indian style. Full ingredients are in the caption, but start by shredding your cucumbers and then salting it to remove the excess water. Mix your flours together and then add the spices and veggies. Add the yogurt and lightly toss. Then add water as needed. I always finish off with a tbs of Bisquick as I find it makes the waffles really crunchy. Prep your waffle iron and place some batter on the hot surface. Let cook and enjoy! I like to eat it with yogurt but it’s delicious with chutney and ketchup too.
INGREDIENTS
1 cup chickpea flour
½ cup rice flour
½ cup ragi flour
1 tbs Bisquick (optional)
1 cup shredded cucumbers
1 shredded jalapeno pepper
2 tsp red chili powder
Salt to taste
Pinch hing (asafoetida)
1 tsp turmeric
1 tsp ajwain seeds
1 tsp cumin seeds
2 tbs yogurt, whisked
1-2 cups water
Optional – green onions, red onions, fresh dill, green chilis
METHOD
1. Shred the cucumbers and sprinkle with salt (this releases the excess water) and set aside
2. Mix the chickpea, rice, and ragi flours together. You can substitute for equal parts chickpea flour and rice flour if you don’t have ragi flour
3. Add spices and veggies and toss together with yogurt
4. Add water, a little at a time, until a batter forms. Add Bisquick and lightly mix
5. Ladle batter onto the heated waffle iron
6. Enjoy hot and eat with yogurt, cilantro chutney and/or ketchup
