MEXICAN PIZZA


let’s TACO ‘bout how sad we all were when Taco Bell retired their mexican pizzas. Luckily, I’ve been making this version for a few years and now you can too! The important thing to remember when making these at home is to have crunchy, saucy, and cheesy components – all other customizations are up to you!

Ingredients

Flour tortillas

Refried beans

Enchilada or authentic Taco Bell sauce

Shredded cheddar/pepper jack cheeses

Veggies: green onions, olives, tomatoes, jalapenos, or anything else you like

Note: I didn’t include specific measurements as it all depends on your taste  

Method

1 Air fry, pan fry, or deep fry the tortillas to crisp them. Put them aside to let them cool

2 Place one crispy tortilla on a plate and spread about 2 tbs of refried beans on top. Drizzle about 2 tbs of sauce on top of the beans

3 Place another tortilla on top of the first one. Sprinkle cheese, add veggies, and drizzle 1 tbs of sauce on top

4 Heat the pizza in a regular oven for about 2 min or in the microwave for about 45 seconds until the cheese is bubbly. Top with additional sauce or even sour cream or guacamole and enjoy!
