UNBE-LEAF-ABLE is the only description for these amazing tofu lettuce wraps inspired by the original PF Changs. I added quinoa for some heart healthy grains and packed my lettuce wraps to the overflowing brim with fresh veggies. Let me know if you have any questions while making these! It’s a family favorite!!
Ingredients
3 tbs hoisin or veg stir fry sauce
2 tbs rice vinegar
1 tsp sriracha (adjust to taste)
1 tbs sesame oil
1 package extra firm tofu
2 tsp each grated ginger and garlic
1 cup stir fry veggies, diced (mushrooms, peppers, water chestnuts)
¼ cup thinly sliced green onions
2 tbs chopped cilantro
8 large romaine or butter lettuce leaves
1 cup cooked quinoa
Optional toppings: sambale, peanut sauce, sriracha
Optional toppings: grated carrots, diced avocados, watermelon radish, green chilis
Method
- Whisk together hoisin sauce, rice vinegar, and sriracha
- Press the tofu to squeeze out as much liquid as possible and dice into 1 inch pieces
- Heat oil in skillet over medium-high heat and sauté tofu, ginger, and garlic. Cook for about 5 minutes until tofu turns a light gold and add stir fry veggies. Cook for 3 minutes and add the hoisin sauce mixture, green onions, and cilantro. Cook for 1 more minute until all tofu and veggies are coated
- Spoon the quinoa and then tofu mixture into individual lettuce leaves. Top with optional toppings and sauces and enjoy immediately.
