we had 3 lonely pav (bread buns) left over one week and I was racking my mind to figure out how to use them up and at the same time not have to make multiple options for lunch. Ta da – that’s how the masala pav pizzas were innovated (out of laziness and desperation). Truly, though, they are super yummy and filling and can be pulled together quickly in about 10 min. They are perfect when you are craving a spicy snack!
Ingredients
2 tbs Amul butter
½ tsp cumin
Pinch hing
1 green chili (finely chopped)
1 ½ tsp garlic (finely chopped)
1 ½ tsp ginger paste
½ cup onion (diced)
½ cup bell pepper (diced)
1 cup tomatoes (diced)
¼ tsp turmeric
½ tsp red chilli powder
2 tbsp pav bhaji masala
Salt to taste
1 tbs lemon juice
2 tbs cilantro (finely chopped)
6 sliced pav (leave the tops connected and the bottoms connected)
Garnish – finely shredded Amul cheese
Note: The Amul butter, Amul cheese, pav and other ingredients are all available in your nearest Indian store
Method
- Heat 1 tbs butter in a skillet. Add ingredients in this order and stir regularly – cumin, hing, onions, green chili, ginger, garlic, tomatoes, bell peppers
- Cook for about 5 min and add all remaining dry spices
- Use a masher to blend all the ingredients together
- Add lemon juice and cilantro and adjust spices to taste
- Set veggie mixture aside
- In the same skillet, add 1 tbs of butter and grill the inside of the pav
- Once browned, flip the pav over and top with the veggie mixture
- Separate and plate the pav. Grate Amul cheese on top and enjoy!
