– this leprechaun approved zucchini bread is a fun way to incorporate a natural green color and some extra vitamins to St Patrick’s Day festivities. Here are a few tips to make the perfect zucchini bread each time:
– Do not overmix the batter
– Do not mix the batter too fast
– Resist the temptation to add more liquid – this will be a thick batter
– Omit the spinach to make this zucchini bread year round
– After taking the zucchini bread out of the oven, let it cool in the pan for just 5 minutes. You want to invert it onto a cooling rack asap

Ingredients
Wet ingredients
1/3 cup coconut oil
¼ cup almond milk (can sub water)
½ cup baby spinach
1 tbs ground flaxseeds
1 cup brown sugar
2 tsp pure vanilla extract
½ tsp pure almond extract
1 cup grated zucchini
Dry ingredients
1 ½ cups all-purpose flour
½ tsp each baking powder, baking soda, salt
1 tsp cinnamon
½ tsp each pumpkin spice
Optional mix-ins – chocolate chips, chopped walnuts
Optional topping – hemp seeds, chocolate chips
Method
1 Preheat oven to 350F and grease the loaf pan
2 In a high speed blender, blend the almond milk and spinach until completely smooth. I did not strain the liquid out but you may need to if you don’t use a high speed blender
3 Blot the zucchini with a paper towel to remove excess moisture. Set aside
4 Mix together all dry ingredients and add in optional mix-ins now
5 In a separate bowl, mix spinach mixture with remainder wet ingredients except the zucchini. Whisk together until combined
6 Gently stir in zucchini to the wet ingredients
7 Add dry ingredients to the wet ingredients and gently stir until just combined. Do NOT overmix
8 Pour batter into the greased pan and bake for 45 min. Test doneness by inserting a toothpick into the loaf
9 Let cool in the pan for 5 min and then cool sideways on a cooling rack
10 Slice after the zucchini bread has cooled for 30+ min and enjoy it right away before the little goblins finish it all of
