TORTILLA BEAN SOUP (vegan)


Now, I’m sure all of you have had a tortilla soup before but this may be the best one you’ve ever had. It’s full of plant-based protein but still light; it’s filling but made with lots of fresh vegetables and spices. This one is a staple in our house!

Ingredients:

Temper:

1 tbs oil

1 tsp cumin

Pinch ajwain

1 cup diced onions

2 bay leaves

2 guajillo peppers

3 cloves minced garlic

1 tbs grated ginger

1 cup bell peppers

½ cup diced tomatoes 2 diced jalapenos

1 can enchilada sauce or 1 cup chipotle salsa

4 cups vegetable stock

4 cups cooked beans (black beans, kidney beans, pinto beans, white beans, cannellini beans, or whatever you have in the pantry)

1 cup shredded spinach

1 cup additional vegetables (carrots, zucchini, fire roasted corn) ½ cup chopped cilantro

Garnishes/toppings – fresh cilantro, bell peppers, jalapenos, red onion, guacamole/avocado, tortilla chips, salsa/pico de gallo, chimichurri sauce, @bitchinsauce, tomatoes, lime juice, cheese, lettuce, sour cream, and whatever else your heart desires!

Note: my preference is to use 2 cups dry beans and then cook them with the broth in the Instant pot/pressure cooker once the temper is done. If using dry beans, turn on bean mode or high power/35 min at Step 2 below and add the soft vegetables after the beans cook. The 2 cups of dry beans will cook to be the equivalent of 4 cups.

Method:

1 Heat a large pot over medium heat. Once hot, add oil other temper ingredients, and any hard vegetables (e.g. carrots) stirring frequently

2 Once onions are translucent, add the vegetable stock, enchilada sauce, and the beans. Stir together and simmer for 30 min.

3 Use an immersion blender to blend about 25% so that the texture is still chunky. Be careful to not overblend. Add soft/frozen vegetables 

4 Reduce to low heat and cook for 10 more minutes. Add cilantro and stir before serving

5 Ladle into bowls and add toppings. Enjoy!
