INDO-CHINESE RICE SIZZLER


– When I was in high school and visited India, I heard my cousin talking about sizzlers and I was immediately intrigued by then. Sizzlers generally have stir fried noodles or rice as a base and then is topped with paneer (or tofu), French fries, additional sautéed veggies, spring rolls for Asian sizzlers, mozzarella sticks for Italian sizzlers, empanadas for Mexican sizzlers, etc. I drizzled my secret mixture on top right before serving to cause the “sizzle” at the table while serving.  It’s not a complicated dish but definitely gets all the oohs and aahs! Ingredients:

For Rice:

1 tbsp sesame oil + extra to coat the sizzler plate

1.5 cup cooked basmati rice

¼ cup finely chopped green onions

2 finely chopped Thai chilis

1 cup total veggies, finely chopped (green pepper, carrot, cabbage, broccoli, baby corn, mushrooms, onion, carrots)

½ cup paneer or tofu cubes,

2 tbs finely chopped garlic

2 tbs finely chopped ginger

1 tbs soy sauce

1 tbs sambale (spicy) sauce (to taste)

1 tbs tomato ketchup

Salt and pepper (to taste)

Garnish – blanched cabbage leaves, cilantro, black sesame seeds

Extras – spring rolls, steamed dumplings

Secret sizzler sizzle sauce – 1 tbs each sesame oil, water, rice vinegar, whisked together

Method:

1. Heat oil in a skillet

2. Add green chilis, ginger, and garlic and pan fry the paneer/tofu. Remove and put to the side

3. Make sure skillet is still hot and add all veggies except green onions

4. Sauté the veggies for 2 min, add rice, and all other ingredients except the garnish and extras. Taste and adjust the spices to your taste

5. Add paneer/tofu and mix all together

6. Heat the sizzler plate (or a fajita plate) on the stovetop or oven for about 4-5 min until it is really hot. Lightly brush with a little sesame oil

7. Reduce to low heat, place the cabbage leaves on the plate, add rice, and add garnish and extras

8. Drizzle the secret sizzler sizzle sauce on the sides to create the smoke and sound of the sizzle and serve immediately
