Ingredients
1 pint strawberries
1 cup high quality chocolate chips
1 tbs coconut oil
Optional toppings: chopped nuts (pecans, pistachios, walnuts), coconut, mini chocolate chips, toffee bits, sprinkles
Method
1 Rinse strawberries and dry thoroughly
2 Place a piece of parchment paper on a baking sheet
3 Combine chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until completely melted smooth
4 Dip strawberries in the chocolate, twist to let the excess chocolate drip off, and place on the baking sheet
5 Sprinkle optional toppings on top of the chocolate
6 Refrigerate for about 30 minutes until the chocolate is set
7 Chocolate covered strawberries are best eaten the same day that they are made but can be kept in the refrigerator for 24 hours. Just remove 30 min before you plan to eat them
