WATERMELON MINT FETA SALAD


– this summer salad is going to make you lose your RIND!  It’s perfect for a summer backyard gathering and also travels well in the cooler for a picnic. I love how light and fresh it tastes!

The amounts below are for a party – feel free to reduce the amounts proportionally.  You can also omit the cheese and onions to make it vegan or Jain friendly, respectively. 

1/4 cup extra-virgin olive oil 

3 tbs fresh lemon juice 

2 tsp sea salt

1/2 tsp freshly ground pepper 

1 tsp Tabasco (optional)

10 cups seedless watermelon, scooped into balls with a melon baller or cut into square chunks 

2 cups feta cheese, crumbled 

1 1/4 cups pitted kalamata olives, coarsely chopped (optional) 

1 small sweet diced onion

1 cup coarsely chopped mint leaves

1 In a large bowl, whisk the oil, lemon juice, salt, Tabasco and pepper

2 Add the watermelon, 3/4 cup mint, feta, olives and onion and toss gently. Chill for an hour

3 Garnish with remaining mint and serve
