it’s definitely a hot summer and in order to maintain my hot mom summer aspirations, I reach for this pineapple slushie when I want a sweet treat that’s refreshing and healthy. There’s no extra sugar added and it’s made with all whole, natural ingredients. I froze my fresh pineapple, but you can use storebought frozen ones. You can also use fresh unfrozen pineapple but may need to add ice for a colder drink. Feel free to experiment with your own proportions or additions.
INGREDIENTS
2 cups frozen pineapple chunks
2 cups coconut water
1-2 cup soda water
Optional – 1 tbs lime juice, 4-5 pieces of mint
METHOD
1.Put the pineapple, coconut water, lime juice, and mint in your high speed blender and blend together on smoothie/ice crushing mode or until the pineapple chunks are blended
2.Pour into 4 glasses and top with ¼ to ½ cup soda water each (amount depends on how sweet the pineapple is)
3.Garnish with mint, pineapple slice, and a cute straw and enjoy immediately
