Do your kids get super hangry after school? Here’s a hearty after school snack (inspired by @sanjanafeasts) on those days when you’re running from extracurricular activity to activity. It’s customizable for any food allergies/preferences and is loved by kids of all ages. I made it with the Indian Maggi noodles, but you can use any ramen packet and customize the oil, toppings, and sauces to create different variations. My favorite toppings are chickpeas, tomatoes, jalapenos, corn, cilantro chutney, garlic chutney, and topped with fresh cilantro and crunchy sev.
Ingredients
1 packet Maggi masala (or any ramen noodle)
½ tbs oil
1/3 cup water
½ cup each of favorite chaat veggie ingredients e.g. chickpeas, potatoes, red onions, tomatoes, cucumbers, corn, etc.
1 tbs each cilantro chutney, garlic chutney, tamarind chutney
¼ cup sev
Cilantro garnish
¼ cup yogurt with a pinch each of black salt, chaat masala, salt, and sugar
Process
Heat oil in a pan and add broken up noodles. Dry roast for 1 minute
Add water and the masala packet and cook covered for 1 ½ minutes
Add your favorite chaat ingredients and combine using a light touch for 30 seconds. Turn off heat
Place the noodles and veggies mixture in a bowl. Top in this order – chutneys, yogurt, sev, and finally cilantro. Feel free to finish off with a pinch of black salt, red chili powder, and chaat masala if you’re feeling extra adventurous!
Hot tips
Do all the prep – I dry roast the noodles and cut up all the veggies as this dish comes together very quickly and you want to eat it immediately
