KESAR DOODH (SAFFRON MILK)


we grew up drinking this saffron milk as a warm treat in the evenings. My husband grew up drinking it in the mornings before his morning chai. My cousin likes dunking her jalebis in it as a dessert. No matter what time of day you drink this, though, the consensus is it’s sweet, fragrant, nourishing and very calming. Super easy too! Be sure and share your cuppas with me!

INGREDIENTS

2 cups milk

½ tsp ground cardamon powder (elaichi)

4-5 saffron strands

1 tbs total ground nuts (almonds, pistachios, cashews)

1-2 tbs sugar (per taste)

Garnish – additional saffron strands, almond slices, rose petals

METHOD

Take a heavy-bottomed sauce pan and heat it up. Add all the ingredients and bring the milk to a rolling boil. Let simmer for 2-3 min, Pour into cups/glasses and add garnishes. Savor slowly and enjoy yourself!

Note: feel free to omit the nuts if you have an allergy.
