this dal powder is a game changer. I make this for my kids to take to college for quick meals and we also take it on trips for when we are missing homecooked meals.
1 cup non-oily toor dal
2 tbs oil
2 tsp mustard seeds (rai)
½ tsp hing
1 tsp turmeric powder (haldi)
4 dried red chili peppers
1 tbs red chili powder (to taste)
1 ½ tbs coriander cumin powder (dhana jiru)
1 tsp garam masala
2 tbs aamchur
4 tsp salt
dried curry leaves
2 tbs dried cilantro
1 tsp dried fenugreek (kasuri methi) Garnish: jaggery, lemon juice, shredded cilantro
1 Wipe the toor dal with a slightly damp cloth and let sit out on a baking dish for about 30 min
2 Dry grind the toor dal into a medium fine powder (be careful to not grind it too finely)
3 Heat oil in a skillet and add mustard seeds, hing, haldi, and ground toor dal. Dry roast on low flame until the dal turns aromatic
4 Add the remaining spices and dry roast on low flame for approximately 1 min while stirring constantly
5 Let the mixture cool and store in an air-tight container
6 When you want to make the dal, whisk together the powder and warm water at a 1:4 proportion. Add the garnishes and boil for 5 min until the dal thickens. You may add more water if you prefer it thinner. Voila – add in rice, papad, and ghee and a healthy quick dinner is ready to go!
