CHOCOLATE BADAM BARFI


this Indian chocolate almond type fudge is going to make you nuts! Typically, you soak the almonds, dry them, and then grind them which can be a laborious process but I used almond flour to whip this up in less than 30 min. I used an edible glitter spray to fancy it up a bit and voila it’s ready for any fancy dinner party or a sweet treat for a fun night in. You can definitely use slivered almonds or silver leaf to decorate the top if you prefer. Let me know if you make these!

INGREDIENTS

1 c almond flour (I used Bob’s Red Mill but any brand should work)

1 tbs ghee or vegan butter/coconut oil

½ c granulated sugar (do not use powdered sugar)

¼ c milk

1 tsp saffron strands

½ c chocolate chips

METHOD

1 Warm the milk and soak the saffron strands in it

2 Heat 1 tbs ghee over low medium heat and add the almond flour. Cook for about 5-6 min over the low medium heat stirring constantly until you can sense the change in aroma

3 Add the saffron milk and sugar to the almond flour and stir constantly. It may sputter but continue to stir. The mixture is ready once the mixture leaves the sides of the pan and a non-sticky ball begins to form

4 Line a dish with parchment paper. You can also grease the dish with ghee but I find it is easier to remove the parchment paper from the dish to cut the barfi pieces

5 Pour the almond mixture into the dish and use the back of your spoon to even it out

6 Melt the chocolate chips and pour over the top of the almond mixture. Add your garnish to the top before the chocolate sets

7 Once cooled (about 10 min), lift the parchment paper and cut into pieces. Enjoy!
