so many PASTA-bilities when making lasagna, but here’s the recipe that keeps our whole family happy! Feel free to substitute the veggies that your family likes best. You can definitely use no-boil lasagna noodles, but our family prefers the boil ones. Mangia!
1 Boil lasagna noodles, rinse in cold water, and set aside
2 Heat olive oil in a skillet and then add cumin seeds, ground ginger, diced garlic, chopped jalapenos, sliced peppers, roughly chopped spinach, sliced fresh Marzano tomatoes, some salt, red chili powder, coriander powder, and TJ’s Italian bomba sauce. Let this veggie mixture slightly cool and preheat the oven to 375F
3 Spread your favorite tomato-based sauce on the bottom of your pan – add noodles, the veggie mixture and cheese. Cover with another set of noodles. On this layer, add pesto or zhoug sauce in place of the tomato sauce but definitely layer on the veggies and cheese
4 On the topmost layer, add cheese, green onions, tomatoes, and basil. Cover the pan with aluminum foil and bake for 20 min. Then uncover and broil on 450F for 5 more min
5 Enjoy with garlic bread and an awesome salad!
