While our Sunday will be spent at the corn maze, our minds will be on this delicious vegan elote. Elote is a popular Mexican street food and it’s basically grilled spicy, creamy corn. It can be served on the cob, but we prefer ours with the corn kernels shucked.

The inspiration for this elote came one day when we had grilled corn on the grill for a BBQ but had a lot left over. I didn’t want to waste food, so, I decided to strip the kernels off and make this elote for a late night snack for the kids. It’s delicious on its own but we like eating it with chips (almost like a salsa). If you don’t have fresh corn or can’t grill it, then you can use frozen or canned corn. If you want the smoky taste, then you can char them in the air fryer or oven. 


4 ears of grilled corn, separated from the cob or 2 cups frozen grilled corn

1 tsp vegan butter

¼ cup vegan mayonnaise

1 tbs vegan sour cream (optional)

1 ½ tsp lime juice

½-1 tsp chili powder

½ tsp ground cumin (optional)

½ tsp salt


2 tbs finely chopped cilantro

¼ cup vegan parmesan (optional)


1 Heat the vegan butter in a skillet and add corn

2 Add mayo, sour cream, lime juice, chili powder, ground cumin, and salt

3 Mix together until heated thoroughly. Taste and adjust spices to your liking. Add garnishes and enjoy!
