SPICY VEGETABLE HUMMUS


– hummus is the tasty sidekick found on many Mediterranean dinner plates, but here’s a version that my friend made for me at a recent dinner party that elevates the traditional chickpea dish. I like to make my own hummus (let me know if you want the recipe) but you can use store bought hummus too. First take @traderjoes fire roasted corn and sauté it in a pan until it’s thoroughly defrosted and then let cool. Spread the hummus on a serving dish and sprinkle paprika (less spicy) or spicy ground red pepper (more spicy) and a dash of toasted ground cumin over the hummus. Top with the corn and freshly cut green onions. Drizzle with olive oil and another dash of paprika/red pepper and serve with mini pita bread, pita chips, or your favorite vegetables. This will definitely be your new favorite at any appetizer table.
