SPICY QUESO


– it may sound cheesy, but this cheese dip recipe is really grate!! In queso (case of) emergency, you definitely want to save this recipe. Ok, enough of the puns, but this recipe is seriously so easy and satisfies all the hot, melty, spicy, cheesy cravings with fresh ingredients.

Ingredients

1 tbs butter

½ small onion, diced

2-3 jalapenos, diced (to taste)

3-4 garlic cloves , minced

½ cup whole milk

2 heaping tbs cream cheese

½ tsp turmeric powder (optional)

1 cup each pepper jack and cheddar cheese, shredded

¼ cup quartered cherry tomatoes

½ tsp salt (to taste)

2 tbs cilantro, chopped

2 tbs favorite hot sauce (e.g. Cholula)

Method

  1. Heat butter in a pot and saute the onion, jalapenos, and garlic over medium heat
  2. Add milk first and then cream cheese and turmeric to the pot. Stir until the cream cheese has melted into the mixture and it is smooth (I generally use a whisk)
  3. Reduce the heat to low and add cheese to the mixture ½ cup at a time, making sure the mixture is smooth before adding more cheese
  4. Stir in the tomatoes, hot sauce, cilantro, and salt. Continue to stir over low heat. If queso is too thick, then you can add warm milk in ¼ cup increments until it’s the desired consistency
  5. Serve warm with tortilla chips, salsa, pickled jalapenos and your favorite beverage
