SALAD SPRING ROLLS


Come make these low calorie and delicious salad spring rolls with me today! I whipped together a spicy peanut sauce and you can find the ingredients in the caption or check out this post and others on reshmomlife. Be sure and tag me if you make these! They are perfect when you are hangry and just want yummy food fast.

INGREDIENTS

For the rolls:

1 package of spring roll rice wrappers

1 package seasoned tofu, cut into slices or matchsticks

2-3 cups veggies (avocado, carrots, bell peppers, romaine lettuce, cucumber), cut into matchsticks (can also use broccoli slaw or preshredded veggies)

Fresh herbs (mint, basil, and/or cilantro)

Fresh jalapeno slices

For the peanuts sauce:

1/4 cup hot water

1/3 cup peanut butter (prefer smooth)

½ tsp soy sauce

½ tsp sweet chili sauce

1 tsp hoisin sauce

1 tsp grated garlic and ginger

1 tsp sriracha

1 tsp sambale

1 tsp rice vinegar

METHOD

1 Heat 2-3 inches water in a flat sauce pan

2 Place 1 rice wrapper into the water and let soak for 10-15 seconds and place on a plate

3 Layer tofu, veggies, and herbs in the middle of each roll

4 Working carefully, fold the sides of the spring roll in over the ingredients and roll like a burrito. 

5 For the peanut sauce, add all ingredients except the vinegar to a saucepan and heat together on low heat. Adjust ingredients to your taste level. Add vinegar at the very end and dip the spring rolls to your heart (and waist’s) content!
