POTATO CURRY


this flavorful potato curry is a traditional Gujarati dish known as bataka rasawalu shaak or batata nu shaak. While the ingredients are basic (potatoes and tomatoes), each family has its own special recipe so feel free to adjust any of the ingredients to fit your preference. It really is an explosion of spices and super comforting at the same time. Enjoy it with a fresh and fluffy roti, steamed rice, or khichdi for a soul-satisfying meal!

INGREDIENTS

2 tbs oil

1 tsp mustard (rai)

½ tsp cumin (jeera)

1-2 dried red chili

1 piece cinnamon

3-4 cloves

¼ tsp hing (asafoetida)

Few curry leaves

½ tsp turmeric

1 tsp red chili powder

1 tsp dhana jiru (coriander cumin) powder

½ tsp garam masala

1½ cup water

4 medium potatoes, cubed

1 tsp salt

¼ tsp dried methi (fenugreek)

¼ cup tamarind extract

1 tsp jaggery (can substitute sugar)

Finely chopped cilantro

INSTRUCTIONS

1 Heat oil in a large saucepan and add temper ingredients

2 Add 1 cup of the water, dhana jiru, garam masala, salt, and potatoes and stir well

3 Cover and boil for about 10 minutes or until the potatoes are almost cooked

4 Add the remainder of the ingredients and stir well. Simmer for about 5 more minutes until the potatoes are completely cooked.  Mash some of the potatoes to thicken the curry

5 Add cilantro and stir. Garnish with additional cilantro and enjoy hot!
