this all-purpose masala plus a vegetable or lentil and an Instant Pot/pressure cooker is all you need for a steaming hot easy Indian main dish for dinner. Just add a roti/naan or rice/dal and papad for a traditional, delicious meal.
You can use this to make any bharelu shaak (filled vegetable) such as bhindi (okra), but my favorite way is to add to vegetables (e.g. potatoes, zucchini, corn, etc.) and cook in the Instant Pot. I often layer dal, rice/quinoa, and the vegetable together in the Instant Pot and cook it all at once – it really makes weekday meals so easy!
Note: All ingredients can be adjusted/omitted based on your preference.
INGREDIENTS
1 cup peanuts
2 tbs sesame seeds
2 tsp garam masala
3 tsp red chili powder
2 tsp turmeric powder
2 tsp dhana jiru powder
1 tbs sugar
1 tsp salt (to taste)
1 tsp cumin seeds
¼ tsp ajwain seeds
¼ tsp hing (asafoetida)
1 tsp kasuri methi (dried fenugreek)
2 tbs chopped cilantro (washed and dried thoroughly)
10-12 chopped curry leaves (similar to the way cilantro is chopped)
1 tbs lemon juice Optional: 1/3 cup shredded coconut, 1 tsp shredded fresh ginger, 2 cloves shredded garlic but if using these fresh ingredients then it will reduce the refrigerator shelf life
1 Grind the peanuts medium coarse in the food processor. If you prefer it to be less coarse then feel free to grind it finer. Our family enjoys the texture of medium coarse
2 Add all remaining ingredients together and mix thoroughly. The mixture will be dry but the natural oils from the peanuts and lemon juice will combine all of the flavors together nicely 3 Store in a covered container in the refrigerator for about a month
