PAV BHAJI


this spicy “full of veggies” Indian street food is heart-warmingly delicious and easy to make in the Instant Pot. “Bhaji” refers to the veggie mixture and “pav” refers to bread. This is an awesome meal to make when you’re short on time as you don’t have to chop up the veggies precisely. I up the nutrient factor on this dish by adding a lot of veggies that aren’t normally in the recipe. Try it – the kids won’t even realize it!

Ingredients

1 tbs butter

½ cup onion, diced

2 jalapenos

1 tablespoon ginger grated

1 tablespoon garlic minced

2 vine-ripened tomatoes, diced

1 medium cauliflower (I core the center but don’t even bother cutting it up)

3 medium red potatoes (I just peel them and don’t even cut them) 

1 medium zucchini, peeled and rough chopped

½ cup each green pepper and red pepper, diced

½ cup carrots

½ cup frozen green peas

1 cup water

2 tablespoons Everest/Badshah pav bhaji masala

Pinch of hing (asafoetida)

¼ tbs cumin

1 tbs red chili powder 

½ tbs turmeric

12 ladi pav or other buns

Garnish

½ cup finely diced red onion

Lime wedges

Cilantro

Process

Turn on the Sauté setting on the Instant Pot and heat the butter

Add the cumin, hing, onion, jalapenos, ginger, and garlic and sauté for about 3 minutes

Add the tomatoes, turmeric, red chili powder, pav bhaji masala and sauté for 3 more minutes

Blend the carrots with 1 cup water and 1 tbs of salt and add to the mixture. Note: if you choose to omit carrots, add the salt for flavor and water to build steam in the Instant Pot.

Add the zucchini, green/red peppers, potatoes, and cauliflower and mix together

Set the Instant Pot to Pressure Cook for 10 min and close the Instant Pot

Use natural release and open the Instant Pot

Open the pot and use a masher to mash the mixture. Add the green peas and taste and adjust the salt, red chili powder, and pav bhaji masala to your taste

Keep the Instant Pot on keep warm mode while warming up the buns

Prior to serving, garnish the bhaji with cilantro and squeeze lime over the dish.

Optionally, add a pat of butter on top

Toast the buns with butter on a skillet and enjoy with the bhaji and red onions
