No summer BBQ celebration in an Indian household is complete without grilled paneer. I soaked the paneer in a simple yogurt marinade and then racked them up with some veggies and grilled away. Apologies that I don’t have great post-grill pics – those perfectly charred skewers were so much in demand that they didn’t last long enough for those pics to occur!
Ingredients
2 cups paneer, cubed
1 cup veggies, cubed (mixed color peppers, onions)
¾ cup Greek yogurt (or very thick yogurt)
1 tbs each ground green chili, ginger and garlic
1 tbs oil
1 tsp cilantro coriander powder
1 tsp chaat masala
1 tsp tandoori masala
1 tsp garam masala
1 tsp red chili powder
1 tsp dried fenugreek
Salt to taste
2 tbs chopped fresh cilantro Juice of ½ lemon
Method
1 Whisk together all ingredients except paneer and veggies. Adjust spices to your taste
2 Add paneer and veggies and stir gently to coat every piece of paneer and veggie. Refrigerate for 2-3 hours
3 Arrange the paneer and veggies in an alternating manner on skewers
4 Fire up the grill and char away. Optionally, you can sprinkle chaat masala or lemon juice on top, but mine never get to that step!
