MEXICANA HASH BROWN CASSEROLE


Brunch is always a good idea, and this skillet is a great idea! It’s a family favorite and inspired by a favorite dish at our favorite brunch restaurant. I used frozen hash brown potatoes but you can grate your own potatoes as well. I’ve made a Jain version of this before by substituting cauliflower for the potatoes, and it was equally delicious. INGREDIENTS

1 tbs olive oil/butter

3 cups frozen, shredded potatoes

1 cup diced peppers

2 tbs green onions

1 tbs cilantro

1 tbs chopped jalapenos

¼ cup chopped cherry tomatoes

Salt and pepper to taste ½ cup shredded cheese

METHOD

1 Heat oil/butter in a skillet and sauté all of the veggies for about 2 min

2 Add the potatoes, salt, and pepper and gently mix together. Cook for an additional 2 min

3 To make a family style casserole, spread cheese on top and bake in a preheated 375F oven for 10-12 min until the cheese is bubbly on top. Enjoy!
