Khichyu aka papdi no loth aka saju is basically spiced and steamed rice flour, but oh is it delicious! Every Gujarati family has its own recipe – I put cilantro and ground green chilies into my dough which gives it this beautiful green color and a very fresh flavor. It’s typically enjoyed with a drizzle of oil and a sprinkle of masala so I amped it up by plating the dough in a plate and sprinkling sesame seeds, cilantro, and methi masala on top. Then, I heat the oil and add it to top. The light temper is game changing! My sister doesn’t even like normal khichyu and she loves this version. Definitely try it and just let me know if it becomes your new family favorite!
