my MANGO-nificent daughter made this healthy dessert for us over the summer. The key is to steam the rice without water and to use really ripe mangoes. My recipe uses less sugar than the traditional recipe but you won’t miss the sugar if the mangos are ripe. If mangos aren’t available, then feel free to use bananas or omit the fruit altogether.
INGREDIENTS
1 cup uncooked sticky rice
1 can full fat canned unsweetened coconut milk
¼ cup sugar
¼ tsp salt
2 large ripe mangos, peeled, pitted, and cut
1 tbs sesame seeds, toasted lightly
Instructions
1 Wash rice in atleast 3 changes of cold water until the water is clear. Soak rice for 1-2 hours (soaking for less time yields a chewier rice while soaking for more time yields a gooey, stickier rice)
2 Drain rice and steam it for about 25 to 30 min (do not let the water touch the rice) and set aside to cool
3 While the rice cooks, combine the coconut milk, sugar, and salt and cook over medium-low heat until the mixture is hot. The mixture should not boil. Let cool
4 Mix the cooled rice with 1 cup of the cooled sauce. Plate into serving bowls and garnish with additional sauce, mango, and the sesame seeds
