JAIN THAI RED CURRY PASTE


this red curry paste is to thai for!  For those who follow a Jain diet (free of root vegetables among other restrictions), it’s not easy to find ready-made sauces to make meal prep easier. Let me introduce you to this amazingly flavorful Jain Thai red curry paste that is fragrant, spicy, and delicious! Best of all, it comes together in mere minutes.

Ingredients

½ cup red peppers

2-3 red jalapenos or dried red chilis

1 tbs fresh lemongrass or lemongrass paste

½ tsp kaffir lime or regular lime juice

2 tbs water

Salt to taste

1 tsp sesame oil

Process

Place all items except oil in a blender jar and blend until smooth

Taste and adjust spices to your liking

Heat oil on a skillet and cook mixture until the water dries out (you can skip this step if you’re using all of the mixture right away in a curry)
