Here’s one of the foods that takes me back to my childhood. Growing up, fruit salad was always this yummy and healthy mixture of milk and fruit that tastes decadent. Feel free to add all of your favorite fruits and dry fruits and moderate the sugar to your liking. Some like to add custard powder or condensed milk to the milk to thicken it, but I prefer to keep it simple and let the natural tastes of the fruits come through.
INGREDIENTS
3 ½ cups whole milk (or oat milk)
3-5 tbs sugar (to taste)
2-3 cups fruits (banana, apple, green grapes, red grapes, mango, avocado, chikoo (sapodilla), strawberries, pomegranates, tangerines, etc.)
1/3 cup chopped walnuts
½ – 1 tsp ground cardamom
Few strands of saffron
METHOD
1 Add milk, sugar, and saffron to a pot and bring to a boil. Let reduce for about 10 min
2 Once the milk has cooled completely, start peeling/chopping fruits and add the banana, apple, and avocado immediately to the milk as it will brown otherwise. I generally keep the most acidic fruits to the side and add before serving
3 Add in the walnuts and cardamom. Place in the refrigerator until you are ready to serve. Garnish with a few additional strands of saffron
