Here’s the easiest and quickest recipe for gobi or cauliflower stuffed parathas. Heat up oil and add hing, cumin seeds, shredded curry leaves, finely chopped green chilis, some ginger, and my secret ingredient which is pre-chopped cauliflower. Add salt, turmeric, garam masala, coriander powder, sugar, red chili powder and let the filling cool. This filling comes together in 5 min so it’s super quick. The pre-chopped cauliflower is a quick meal game changer. I bought mine in the fresh foods section but you can buy it in the frozen section too. I add lemon juice and cilantro after the filling cools.
Make your roti dough on the side while the cauliflower filling cools. When rolling your roti, keep the center a little thicker than the sides. I don’t worry about making them completely round because I will be folding them. I also don’t worry about the filling being perfectly in the middle. Trust me, it all will taste good. I fold the sides of the roti accordion style and slightly roll it out again. These are a little thicker than others but I like to stuff them with a lot of filling so that it’s a substantial bite. I use a spatula to transfer it to the cooking pan. Cook the paratha on both sides and crisp up with a little oil. These are so good on their own or with a little bit of yogurt.
