normally, I am the one giving my kids recipes, but I love it when they send me pictures of their culinary adventures. Here’s a scene from my oldest son’s college apartment kitchen where he has made fresh vegan fettucine. It’s so beautiful and inspires me to want to go make some fresh pasta right away too! My daughter used this same recipe to make ravioli that was super delicious too.
Note: I have a few different types of flours listed below. You can mix the proportions of the flours or you can use all-purpose flour only if that’s what you have in your pantry. 00 flour makes the pasta silkier. Semolina flour makes the pasta sturdier.
INGREDIENTS
1 ¼ cup all-purpose or 00 flour
1 cup semolina flour (can sub all-purpose)
½ tsp salt
¾ cup warm water
2 tsp olive oil
METHOD
1 Mix the flour, semolina, and salt in a bowl and create a well in the middle where you will add the oil and water. Mix until combined. If the dough seems dry, then add water. If the dough seems wet, then add flour. The dough should be fairly dry
2 Transfer to a flat working surface and knead the dough together for about 8-10 min until it’s smooth (you can use a food processor or kitchen-aid mixer too)
3 Form the dough into a ball and wrap it in saranwrap. Place in the refrigerator for 30 min
4 Once chilled, remove from the refrigerator and cut the dough into 4 equal portions. Keep them wrapped when not using them so they don’t dry out
5 Using flour, thinly roll out the pasta using a rolling pin (my son used a pasta rolling machine but rolling pin works great too). A good test for how thin the dough should be is whether you can see through the dough if you lift it up carefully
6 For fettucine, lightly dust the rolled out dough with flour and then loosely roll it up like you would roll a wrap or a pinwheel. Using a very sharp knife, cut the roll into even ¼ inch strips. Then use light fingers to loosen the strips and make noodle nests. Repeat with the rest of the dough
7 Cook the noodles in boiling salted water for about 2 min (time depends on thickness of pasta) and serve with your favorite sauce
8 For lasagna noodles, you can cut into even 2 ½ – 3 inch strips (you do not need to boil them prior to using)
- For ravioli, place a filling evenly on one part of the dough, cover with the second rolled out dough and cut out using a small circle cookie cutter. Cook the same way as fettucine
