DABELI


This potato stuffed bun is a popular street food/snack item in India.  Each flavor mixes together really well for that perfect bite – the sweet tanginess of the date and tamarind chutney, the spiciness of the masala, the freshness of the cilantro and pomegranate, the bite of the onions, the creaminess of the butter, and the crunch of the sev. Dabeli can be made ahead of time and we like to wrap them individually and take them on picnics or road trips. They are delicious in the lunchbox too. INGREDIENTS

For the Dabeli masala:

4 large potatoes, boiled and mashed

1 tsp fennel seeds

1 tbs cilantro coriander powder

1 tsp red chili powder

1 tbs dabeli powder

1 tsp amchur powder

2 tbs date and tamarind chutney

1 tsp salt (to taste)

For the assembly/garnish:

Buns

Butter

½ red onion, finely chopped

½ c thin sev

½ c pomegranate arils

¼ c cilantro leaves

¼ c red garlic chutney

½ c salted peanuts

Chaat masala

METHOD

1 Mix all of the dabeli masala ingredients together

2 Add butter to a pan, add ¼ cup of the peantus and all of the dabeli masala. Saute for 2-3 minutes until well combined. Taste and add additional spices as per your taste

3 Cut each bun in half and toast the buns until they are golden brown

4 Spread garlic chutney on the top side of the bun

5 Spread the dabeli masala on the bottom bun and layer on the onion, sev, pomegranate, cilantro, and remaining peanuts

6 Sprinkle with additional chaat masala and Enjoy!
