CHIMICHANGAS (JAIN)


These chimichangas may be the best meal I’ve made in a long time. They were so good! These chimichangas are naturally Jain meaning they don’t contain any onions, garlic, or other root vegetables, and by using vegan cheese as part of the filling, they will be vegan. Also, because they are air fried and the filling is cooked with very little oil, they are pretty healthy too. If you’re like me and didn’t worry too much about the folded shape of them, then they will come together very quickly too. Perfect for anytime!

I brushed my pan lightly with oil and toasted the cumin seeds. I add green peppers, red chilis, salt, cooked black beans, and @traderjoes fire roasted corn, and cook it all al dente. Finish it off with cilantro, chili lime seasoning, ground red chili pepper powder, and ground coriander powder. These uncooked tortillas are found at @Costco. I place a generous heaping in the middle of the tortilla and added @tillamook cheese which is hormone free. A bit of origami style tortilla folding and these chimichangas are almost ready for the air fryer. I brushed the tops slightly with butter and sprinkled oregano and crushed red pepper on top. I cooked both sides in the air fryer at 375 degrees for 6 minutes each. I made a fresh tomato salsa on the side and served with chimichurri sauce but you can serve with your favorite pico or hot sauce. Seriously so good!
