y’all know I love my avocado toast, but my sister recently made this cauliflower toast for me, and I now have feelings for cauliflower that I never knew could exist. It’s really delicious and fairly simple to pull together. Be sure and tag me if you make it!
4 cups cauliflower florets
3 tbs olive oil
½ tsp crushed red pepper flakes (to taste)
Salt and pepper (to taste)
¼ tsp nutmeg
12 oz mascarpone cheese (at room temp)
Raw garlic pods
Sourdough bread
Garnish – cilantro, chives
1 Preheat the oven to 400F
2 Mix together the cauliflower florets, olive oil, pepper flakes, salt, pepper, and nutmeg and spread onto a sheet pan
3 Cook for 25-30 min and mix every 8-10 min
4 Once roasted/browned, set aside until cool. Incorporate the mascarpone cheese into the cauliflower mixture. Taste and adjust spices to your taste
5 Toast the bread and rub the garlic pods on the hot bread (the pods will melt into the bread – it’s magical!)
6 Layer the cauliflower onto the toasted bread and garnish with the cilantro and chives. Enjoy!
