BHINDI MASALA (SPICY OKRA)


Don’t settle for medi-OKRA dinner! Use this recipe for the most amazing okra recipe. It’s fresh and easy, and one of my son’s favorites! Cooking with okra can sometimes be tricky – here are some tips and be sure and tag me if you make this bhindi recipe:

1 Wipe the okra with a wet cloth (don’t wash directly in water)

2 Let the okra “sit” for 30 min after cutting it

3 Don’t stir the okra with a spoon once you add it to the pan. I usually swirl it around the pan but won’t toss it until it’s cooked/crispy

INGREDIENTS

2 cups bhindi (okra), trimmed and cut

2 tbs oil

1 tsp mustard seeds

1 tsp cumin seeds

Pinch of hing

1/3 cup ground peanuts

¼ cup besan

1 ½ tsp red chili powder (to taste)

½ tsp turmeric powder

1 tsp cilantro-cumin powder

1 tsp garam masala

Salt (to taste)

½ tsp sugar

1 tsp lemon juice

2-3 curry leaves

Cilantro to garnish

METHOD

1 Heat oil in a skillet and add mustard seeds, cumin, hing, and curry leaves

2 Add chopped okra and mix without stirring too much. Do not cover

3 After about 5-7 min, okra will be cooked. Add all other ingredients except the lemon juice and cilantro

4 Let cook for 2-3 more min. Do not stir too much and do not cover

5 Taste and adjust spices

6 Add cilantro and enjoy with paratha
