here’s your inspo for a yummy weekend treat. I’ve adapted a banana bread recipe from @chefchloe for this recipe. These are perfect for breakfast, in the lunchbox, after school snack, or afternoon coffee break.
Dry ingredients
2 cups all-purpose flour
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp pumpkin spice powder
1 tbs ground flax seed powder
Wet ingredients
1 cup mashed bananas (about 2 very ripe bananas)
1 cup canned coconut milk, mixed well before measuring
1/4 cup oil
1/2 cup applesauce
1 tbs white vinegar
1 tbs pure vanilla extract
Mix-ins (optional)
1 1/2 cups chocolate chips
1 cup walnuts or pecans
1 Preheat the oven to 350°F
2Grease a loaf pan or your favorite glass dish
3 In a large bowl, whisk together dry ingredients
4 In a separate bowl, whisk together wet ingredients
5 Pour the wet mixture into the dry mixture and whisk until just combined. Do not overmix
6 Gently fold in the chocolate chips and walnuts
7 Fill the pan about two-thirds full with batter
8 Bake for about 30 minutes or until a toothpick inserted in the center comes out clean
9 Let cool and the enjoy!
